Grandma Knowles' Potato Salad

My grandma's potato salad is a must at all the family get togethers and greatly missed if it is not there.  However, I do not have that recipe, so I am posting the next best thing - my husband's grandmothers recipe.  This potato salad is a favorite at get togethers as well and requested often.

Ingredients

6 c. new red potatoes diced into 1/2 inch cubes
3-6 hard boiled eggs, cubed
1/4 c. onion
1/4 c. parsley


Instructions

Boil the potatoes until they are soft, be careful not to over cook.  Nothing is worse than mushy potatoes in potato salad.  Drain potatoes in a colander, run potatoes under cold water to cool.   While potatoes are cooling and draining, mix together the dressing.  When potatoes have fully cooled add onion, parsley and eggs.   Fold together carefully as not to mash the potatoes.

Ingredients

Dressing:
2 eggs slightly beaten
1/2 cup sugar
1 Tablespoon dry mustard
1/4 cup vinegar
3/4 cup water
1 1/2 tsp salt
1/2 tsp pepper
1 Tablespoon corn starch (mix with sugar and mustard)

Instructions

In a medium pot, mix all ingredients together and cook until thick.  Cool and add 1 cup of Mayonnaise.

Pour over cooled potatoes and mix gently.  Refrigerate until ready to serve.
