Low Sugar Granola

My 2 youngest love granola on top of their yogurt. In an effort to cut down on their sugar intake, I made this recipe.  It isn't as sweet as my other granola recipe, but still very good.

4 cups rolled oats
1 tsp cinnamon
1/2 tsp salt
1 cup dried fruit (craisins, apples, raisins, apricots....)
1/4 cup coconut flakes
1 cup nuts (sunflower seeds, almonds, pecans, walnuts....)
2 tbs flax seed
5 tablespoons melted coconut oil, olive oil or butter (do not sub margarine for butter)
1 tsp real vanilla
1/3 – 1/2 cup honey
2 egg whites, lightly beaten

Preheat oven to 300 degrees.
In a medium sized bowl mix together oats, cinnamon, salt, fruit, nuts, coconut, and flax seeds.
In a separate bowl mix together coconut oil, vanilla, honey and egg white.  You will have to warm up the coconut oil and honey a little in order to mix together.

Pour the wet ingredients over the dry, mix well making sure all the dry ingredients are coated.

Grease to cookie sheets or line with parchment paper. Divide the granola evenly between the sheets. Press the granola onto the sheets. 

Bake in the oven for 25-35 minutes. Do not stir while baking.  Allow to cool for 15 minutes.  Store in an airtight container.

This is so yummy on top of yogurt.
