Homemade Oreo Cake Cookies

This is an easy recipe that the kids will be able to help with.
My daughter loves to cook the cookies up in her easy bake.
This recipe is a keeper for sure. My husband was requesting that I
make more  because they went to fast.  Next time I will make a double batch.

Cookie Recipe
1 - package devil's food cake mix
2 - eggs
1/2 - cup oil

Turn oven on at 350 degree. Add all ingredients into a medium sized mixing bowl and blend until thoroughly mixed. The batter will be very thick, so I recommend using a wooden spoon to mix instead of a mixer.

Line baking sheet with parchment paper (I love parchment paper, it is a must at my house. Saves me from washing pans) or spray with cooking spray. Roll dough into balls. I use a small cookie scoop. Place on cookie sheet and flatten with the bottom of a glass.

Bake for 7-8 minutes. Allow to cool on cookie sheet, then place on a cooling rack.



Prepare the filling:
Cream Cheese Filling Recipe
1/2 cup butter (1 stick) - softened
1 - 8oz package cream cheese - softened
3-4 cups - confectioner's sugar (depending on desired consistency)
1 - tsp vanilla extract
Milk

Cream butter and cream cheese and mix well. Add vanilla extract and confectioner's sugar. Mix slowly until you reach your desired consistency. Add a tablespoon of milk in at a time until you reach desired consistency.
(You can freeze the remaining frosting and use for another time or enjoy on graham crackers.)

Vanilla Filling Recipe
1/3 cup butter room-temperature, unsalted butter 
3-4  cups sifted confectioners’ sugar
2 - teaspoons vanilla extract
1/4 teaspoon salt (do not add if you are using salted butter)
1/4 cup milk

Cream butter and add vanilla extract and confectioner's sugar, salt and milk slowly until you reach desired consistency.

To assemble cookies:
Place a 1/2 inch tip in pastry bag. Fill bag with filling. You can also use a zip lock bag by filling and cutting the corner off of the bag, or just spread using a butter knife. Add about a tablespoon of filling onto the center of one cookie.
 Place a similar size cookie on top and press down until the frosting reaches the sides.
