Mashed Potato Stuffed Hot Dogs


As a kid I loved it when my mom made Stuffed Hot Dogs. They were a favorite of everyone.  My mom never used fake potatoes. She always took the time to peel, chop and boil real potatoes in order to have the best mashed potatoes.  My kids have that same great taste of real potatoes. I don't think they know what instant potatoes are. Even though this is a simple recipe, I always take the extra time to make mashed potatoes.

6-7 potatoes or around 3 cups of instant potatoes
1 package hot dogs
Cheese

For the mashed potatoes:
Milk
Salt and Pepper
4 tbs Butter

Peel and chop potatoes.   Rinse them off and put in a large pot and fill with water. Bring to a boil and cook until they are very tender and break apart when poked with a fork.  Drain in a colander.  Put potatoes in a large bowl and mash with a mixer or a potato masher.  Mix in a little bit of milk, salt and pepper to taste,  4 tbls butter (can use more if you like them really buttery. DO NOT use margarine, the taste just isn't the same).  Keep adding milk until you get it to the consistency that you like.  I never measure it out, so I have no idea how much to tell you to put in.

You can add chives, garlic, salt and pepper 
or whatever you like to flavor  potatoes.

Slit the hot dogs length wise. Be careful not to
cut them all the way through. Place on a cook sheet.


Place 3 heaping tablespoons of potatoes onto the
hotdogs. Top with either sliced cheese or
shredded. Bake at 350 degrees until the cheese is
melted and the hotdogs are heated through, about 15 mintues.
