Poppy Seed Chicken


My sister introduced this recipe to me a while ago. It is so yummy.  Then I happened to find the recipe in a neighborhood cookbook that I have had for years.

1 rotisserie chicken or 6 breasts
1 1/2 stacks Ritz crackers
2 Tbsp. poppy seed
1 cream of chicken of chicken soup
1/2  to 1 cube butter
1 c. sour cream

If using a precooked rotisserie chicken, pick all the meat off. If using chicken breast cook and cube the meat.  Put in greased 9x13 inch pan. Mix soup and sour cream; pour over the chicken. Melt butter and crush the Ritz crackers. Add butter, crackers and poppy seeds together and spread on top the chicken. Bake at 350 degrees for 30 minutes.

*sour cream substitute 1 cup lowfat cottage cheese plus 1 to 2 tsp. lemon juice, blended smooth in the blender or food processor.
