Chocolate Zucchini Bread

My daughter noticed I was making something with Zucchini in it. She firmly declared that she would not eat anything with Zucchini in it. Soon the house was filled with a wonderful chocolate smell and of course my daughter came to investigate.  She eyed the bread suspiciously and asked for a small piece.  She loves anything chocolate and this was no exception. It passed the test of my pickiest eater, she loved it even better than my Chocolate Zucchini Cupcakes.

Chocolate Zucchini Bread

Ingredients

3 cups shredded raw zucchini (about 1 pound)
2 cups all purpose flour
1/2 cup unsweetened cocoa powder, sifted
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1 cup Canola Oil
1 cup granulated white sugar
1 cup light brown sugar
4 large eggs
2 teaspoons vanilla extract
1 package semi sweet chocolate chips

Instructions

Preheat the oven to 350 degrees. Grease 2 loaf pans with cooking spray. Set aside.
Grate the zucchini using a food processor or medium grater. Set aside.

In a medium bowl mix together all dry ingredients. Set aside.

With an electric or hand mixer, beat together the oil, sugars, eggs, and vanilla extract until well blended. Fold in the grated zucchini. Add the flour mixture, beating until just combined. Then fold in the chocolate chips. Scrap the batter into the prepared bread pans and bake for 55 to 65 minutes or until a tooth pick inserted into the center comes out clean. Place on a wire rack and let cool for about 10 minutes, then remove from the pans and cool completely.  If you try and remove the bread from the pan to early, it will come out in clumps.
