This recipe comes from my mom. It is a family favorite and was requested a lot growing up.
Crust:
1 cup of butter, softened
1 cup of flour
1 cup of walnuts (#3973)
With a pastry blender or fork blend ingredients together. Mixture should be crumbly. Spread evenly in a 9x13 pan. Bake at 350 for 20 minutes or until crust is a golden brown. Let cool.
Filling:
1 8oz tub of cool whip
1 cup powdered sugar
8 oz cream cheese, softened
Blend together in mixer, scraping down the sides until well incorporated. Spread evenly on cooled crust.
Topping:
2 pkgs of pistachio pudding (#1917)*
Mix pudding according to package directions. Spread evenly onto filling.
Directions for Jello Pudding in bulk packages:
Add 2 cups cold milk to 1/2 cup plus 1 tablespoon Instant pudding. Blend for 2 minutes. Equal to 1 small package of Jello Pudding.
