Zucchini Casserole

This is a great recipe to use up some of that Zucchini. I'm sure it would taste great with yellow squash as well.

4 cups Zucchini, slice into 1/4 inches, round
1 Egg
1/4 cup Milk
1/2 cup Onion, chopped
1/2 cup Parmesan Cheese, grated
1/3 cup Sharp Cheese, grated
1/2 cup + 2 1/2 tbsp. Mayonnaise
1/8 cup Green pepper, chopped
1/4 tsp. Salt
Dash of Pepper
1/4 cup Bread crumbs
1 tbsp. Butter, melted

Slice Zucchini and place in boiling water for about 5 minutes or until tender and drain. Beat egg and add milk and mayonnaise and mix in a medium size bowl. Add chopped onions, cheeses, chopped green pepper, salt and pepper. Mix with Zucchini and place in a greased 7 1/2 x 11 1/2 inch casserole dish. Mix the bread crumbs with melted butter and spread over top of zucchini. Bake for 30 minutes at 400.
