Poppy Seed Dressing


I love a good salad, especially in the summer time.  This is such a great recipe and so good poured over a bed of spinach.  Add strawberries, mandarin oranges, mushrooms, red onions, or toasted almonds.

Poppy Seed Dressing Ingredients:

1/3 c. white vinegar
1 tsp. salt
dash of ground black pepper
3/4 c. sugar or (6 tbls of Xagave for a low sugar version)
1 tsp. mustard or dry mustard powder
1 green onion, ends removed (root end and where the green part starts to get floppy)
1/2 c. vegetable oil
1 tsp. poppy seeds

Instructions


In a blender, combine vinegar, salt, pepper, sugar, mustard and green onion. Continue running the blender while slowly adding in the oil until fully incorporated into the dressing.

Pour the dressing into a storage or serving container and whisk in poppy seeds. Serve over leafy greens.
