Carmel Bread Pudding

1 C. brown sugar                       1  12-oz. can evaporated milk
1/2 C. granulated sugar              1  1/2 C. water
2 Tbsp. butter                        6 Tbsp. dried egg powder*
1 tsp. vanilla                           4-5 slices of dry bread, broken

Combine first five ingredients in a medium saucepan. Bring to a boil. Boil for 5 minutes. Remove from heat. Meanwhile, whisk water and egg powder together. Spread over broken bread pieces in baking dish. Pour water-egg mixture over bread. Bake at 350 for 30 minutes. Pour boiled sauce over bread and cook an additional 30 minutes or until firm.

Cinnamon-Raisin Bread Pudding: Add 1 tsp. ground cinnamon* and 1/2 tsp. ground nutmeg* to dried eggs before blending with water. Stir 1/2 C. raisins into boiled mixture before pouring over bread pudding.

How to make evaporated milk
1  1/2 c. water
1/2 C. + 1 T. dry non-instant powdered milk*
Combine ingredients and mix well before using in a recipe.
Yeild: 1  1/2 cups -the equivalent of a 12-oz. can.
